Best Homemade Teriyaki Sauce

This is one of our favorite summer meals. Teriyaki chicken on the barbecue with stir-fried veggies and rice--and it can be on the table in just a few minutes.

Ingredients:
1 cup soy sauce
1 cup sugar or 3/4 cup honey
1 teaspoon grated ginger (2t for extra zing)
4 cloves garlic, crushed
1/4 cup mirin (sweet cooking sake)

Combine all ingredients and heat gently until sugar dissolves. Keeps in fridge for about a week or freezes indefinitely (it won't freeze solid due to the sugar content).

Admittedly, I'm a bit of a teriyaki junkie. Here are some of the ways we use it:
  • Marinade chicken or steak (put teriyaki in ziplok before freezing and it will marinade as it thaws)
  • Brush on salmon at the end of grilling
  • Splash in with shrimp for a stir-fry
  • Brush on veggie shishkabobs before grilling
  • On a pile of rice for a late-night snack

  1. This has quickly become one of my favorite recipes as we use honey out of the Hello Kitty Hive. We also add a little melted butter -- but the recipe is essentially the same. There's nothing quite like it.

    Chicken, beef, ground turkey -- it doesnt matter. We've mixed this mixture in with ground turkey burger patties and it's come out lip-smacking good.

    Have you ever tried the Olive Oyl Burger? Ground up some olives in the food processor -- or buy them pre-ground. Top them on the burger after you flipped it once. Mash it down. Put your favorite cheese slices on top -- let cook on the grill for the remaining four or five minutes.

  2. Ok, I LOVE teriyaki sauce! Since I moved to the south I haven't been able to find a restaurant with a yummy teriyaki chicken bowl, I'll just have to try this out and see if it can satisfy my craving!! :) Thanks!
